## Mushroom Conserva

Zero Acre’s neutral-tasting oil preserves the delicate flavors of the mushrooms for an extended length of time and can be served hot or cold.

## **Mushroom Conserva**

### **Ingredients**

- 1 lb mixed mushrooms (maitake, shiitake, hon shimeji, chanterelle)
- 1 cup sliced shallot
- 2 cloves thinly sliced garlic
- Peelings of 1 lemon
- 2 sprigs rosemary
- 3 sprigs thyme
- 1 pint Zero Acre oil (Pro tip: Since ZAO doesn’t solidify when chilled, store in the fridge or freezer)
- 1 tbsp sea salt
- Several cracks of black pepper

### **Instructions**

1. Combine everything in a sauce pot, slowly bring to a simmer until everything is tender
2. Allow to cool at room temperature
3. Pack & store in refrigerator for up to 7 days
